羊排这么做还不错,没有羊骚味! 有兴趣的可参考下:
INGREDIENTS | QTY. PER PORTION | SPECIFICATIONS | Rack of Lamb | 1 pc | Fresh and trimmed | White bread | 4 pc | Crumbs | Parsley, fresh | 1/8 bunch | Chopped | Rosemary, fresh | 1 spring | Chopped | Thyme, fresh | 2 springs | Chopped | Tarragon, fresh | 2 springs | Chopped | Garlic | 1/2 bulb | Chopped | Dijon mustard | 60 ml | | Olive oil | 60 ml | |
Sea salt and black pepper To taste
METHOD:
- Preheat oven to 400°F.
- Lay bread on a baking sheet in a single layer. Place into the oven for approximately 5 minutes, turn slices of bread over, and bake for another 5 minutes.
- Cut breads in small size, place bread, parsley, rosemary, thyme, tarragon, garlic and olive oil into a blender, and process until mixed well.
- Heat the oil in a sauté pan. Season the rack of lam and sear to a light brown color. Roast in a 400°F oven for 4 minutes.
- Take out the meat from the oven. Brush the meat with Dijon mustard and coat with mixed bread crumbs. Back to the oven, roast for 7 minutes (inside 220~230°F).
